After a lot of looking I found a nice menu extension for the sidebar, but it hadn't been worked on for over a year and had some bugs with newer versions of Mediawiki. I was able to fix them and nested menus should be working now for both the Monobook and Vector skins (click refresh while holding shift if you don't see them to refresh the css).
The syntax is more straightforward also, regular wiki link syntax, which also allows you to link directly to files and to subsections on a page. If you have additions or changes, they can be made at:
