You're correct, the average Empyrean lifespan is approximately 1000 years.

You're also correct in that Asheron, even if he should be dead right this minute, certainly lived beyond his species' natural lifespan.

However, if he were using lifestones and/or vitae to keep himself alive, there would have been three profound and readily apparent effects;

1) The Yalain, or at least the *important* Yalain, would not have died by unnatural causes. Yet, we know they were slaughtered in droves by the Shadows and the Olthoi.

2) Asheron was a mage and a moderately powerful noble. Surely you could assume that other nobles and the Emperor would have used this method as well. Folks like Maila, Caerlin I, and so on, seem mortal enough to me.

3) Asheron probably would have died in the years between the Olthoi invasion and the growth of the Lifestones.

Most people seem to have blithely assume that the Empyrean were immortal gods. Lifestones, however, can't [be] the solution to the mystery. Asheron possessed a unique longevity long before they appeared.
