Tactics
You do not need to kill anything to find the mushrooms. They are a random spawn on the floor.
However.
If you want a lot of mushrooms for titles and xps, this gives an explanation for a more long-term increase in finds.
The mushrooms spawn on the floor instead of a Thrungus.
The dungeons have 4 different spawns: single Thrungus spawn, multiple Thrungus spawn, single Guruk spawn and multiple Guruk spawn.
The Thrungus spawns have of course, the highest chance of spawning a mushroom. The multiple more than the single ones. This can go up to 3 mushrooms in one Thrungus spawn.
The dungeons reset in a way upon leaving and re-entering. However, this does not change the kind of spawn on a certain spawnpoint. I.e. if there is a single Guruk spawn when you leave the dungeon, it will be a single Guruk spawn when you re-enter. If it is a multiple Thrungus spawn (with or without mushrooms), it will be a multiple Thrungus spawn (with or without mushrooms) when you re-enter.
Now, to increase your chances, kill any Guruk you meet.
The respawn will cycle randomly through the 4 different spawns. Keep killing all Guruk, until all spawns have changed to Thrungus. Leave all the Thrungus spawns (of course you can take all the mushrooms).
Upon re-entering, there will be more Thrungus spawn, and therefore, a higher chance for mushrooms.
If you find a single mushroom (i.e. without Thrungus surrounding it), this is a mushroom instead of a single Thrungus spawn. Taking the mushroom will mean, that the spawn will cycle again, and you might meet a Guruk spawn at that point again.
You can get a dungeon so far, it only spawns Thrungii, and therefore, a very high chance for mushrooms.
However, each patch day, the dungeons will truly reset, and spawns will be completely random.
Lore & Dialog
Furgal tells you, "I collect the mushrooms that grow in the Catacombs. We used to be able to harvest these ourselves, but then the Guruk invaded our caverns and destroyed our store houses so we retreated here."
Furgal tells you, "We sneak out when we can to collect the food we need, but I'm worried the Guruk will eat all of the mushrooms and we might starve. So, I'm collecting a backup supply for the town just in case."
Furgal tells you, "Go and find as many mushrooms as you can in the Catacombs. I'll reward you with the knowledge that will help you stay alive on Bur."
